Direct and
Indirect Gas or Charcoal Grilling
Know which cooking method to use to achieve the results you want.
Direct Method:
The Direct method cooks foods with the direct heat of the flame and is
used for searing foods and for cooking foods that take less than 15-20
minutes to cook, such as hamburgers, beef steaks, pork chops. Food is
placed directly over the heat or flame and is turned to cook the other
side.
Indirect Method:
Indirect cooking uses circulated heat to cook. Place foods away
from the flame or heat source (Food is not placed directly above
the flame for this method). Use this method to cook larger cuts
of meat and foods that require longer cooking times at lower
temperatures such as beef brisket, roasts, turkey, chicken, and
ribs. This method requires that the grill remain covered to
circulate the heat.
Combination:
Sear foods like thick pork chops, thick beef steaks, whole tenderloins
and chicken prior to moving it away from the flame to finish
cooking. This locks in flavor, juices and gives meats that fresh
off the grill look and taste.
